Sage Cheese
1st place winner, 2005 Iowa State Fair

recipe by Jo Ellen Whitney, Cumming, IA

1 cup ricotta cheese
2 T. grated Parmesean cheese
2 T. grated asiago cheese
1 T. white wine
2 teaspoons minced fresh sage
2 teaspoons minced fresh basil
1 tsp. minched fresh savory
1/8 tsp. cayenne pepper
1 T. minced chives
1 T. minced garlic chives

Combine all ingredients in the work bowl of a standard mixer. Blend
well. Chill at least one hour before serving, to allow flavors to bloom.

Serve with pretzels, baugette slices, or Parmesan Herb Crisps.
